01 - Preheat your oven to 425°F. Line a baking sheet with parchment paper.
02 - In a large bowl, combine ground turkey, onion, garlic, egg, parsley, Dijon mustard, smoked paprika, salt, and black pepper. Mix until just combined. Form into 4 equal patties.
03 - Place sweet potato fries on the prepared baking sheet. Toss with olive oil, smoked paprika, garlic powder, salt, and black pepper. Spread fries out in a single layer.
04 - Bake sweet potato fries for 25-30 minutes, flipping halfway through, until crispy and golden.
05 - While fries bake, heat olive oil in a large skillet over medium heat. Cook turkey patties for 6-7 minutes per side, or until golden and cooked through (internal temp: 165°F).
06 - If using cheese, add a slice to each patty in the last minute of cooking and cover to melt.
07 - Toast burger buns if desired. Assemble burgers: bottom bun, lettuce, turkey patty, tomato, red onion, sauces, and top bun.
08 - Serve immediately with hot sweet potato fries on the side.
