# How to Make It:

01 - Heat 1 tablespoon oil in a large skillet over medium heat. Add the sausages and brown on all sides for approximately 8 minutes. Remove from pan and set aside.
02 - Add remaining oil to the pan. Sauté onion for 3 minutes until softened. Add garlic, carrot, and bell pepper. Cook for 4 minutes, stirring frequently.
03 - Stir in curry powder, cumin, coriander, and chili flakes. Fry for 1 minute until fragrant, being careful not to burn the spices.
04 - Add diced apple to the pan and cook for 2 minutes to begin softening.
05 - Pour in chopped tomatoes, ketchup, mango chutney, and stock. Stir well to combine all ingredients.
06 - Return sausages to the pan. Bring to a simmer, cover, and cook gently for 20 minutes to develop flavors.
07 - Remove lid and simmer uncovered for another 5 minutes to allow sauce to reduce and thicken.
08 - Taste and adjust seasoning as needed. Stir in yogurt or cream just before serving if desired.
09 - Serve hot with steamed rice or warm naan bread.

# Expert Tips:

01 -
  • The fruit and spices create that magical sweet savory balance that keeps everyone guessing

  • Perfect for using up random ingredients hiding in your crisper drawer
02 -
  • Dont skip browning the sausages first that step builds incredible depth of flavor
  • The apple should still have a slight bite not turn into applesauce in your curry
  • Letting the spices fry in oil for that minute transforms them completely
03 -
  • Use decent curry powder the cheap stuff lacks depth and complexity
  • If the sauce is too thick just add a splash more stock or water
