01 - Combine honey and chili flakes in a small saucepan set over low heat.
02 - Heat mixture gently for 10 minutes, stirring occasionally. Maintain low temperature to avoid boiling while allowing flavors to infuse.
03 - Remove from heat and allow to steep for 10 to 15 minutes to develop spiciness.
04 - Strain through a fine-mesh sieve to remove chili flakes, or leave flakes in for additional heat and visual appeal.
05 - Stir in apple cider vinegar if using to enhance brightness.
06 - Transfer to clean, airtight jar or bottle. Cool completely before sealing. Store at room temperature for up to 3 months.
