01 - Spread softened butter evenly on one side of each bread slice.
02 - Place two bread slices butter-side down on work surface. Layer two cheese slices on each. Top with remaining bread slices, butter-side up.
03 - Preheat large skillet or griddle over medium heat.
04 - Add sandwiches to hot pan. Cook 3-4 minutes per side, pressing gently with spatula, until golden brown and cheese melts completely.
05 - Remove from heat and let rest 1 minute. Cut into halves or quarters and serve immediately.
